General Tso's Chicken

General Tso’s Chicken

You’ll Need:

2 lbs. boneless, skinless chicken breasts, in bite-sized pieces
3 c. oil
2 eggs
1/4 c. cornstarch
dash salt
dash pepper
1/3 c. soy sauce
5 cloves garlic, minced
1 tsp. ground ginger
1 bunch green onions, chopped
1 jar General Tso’s sauce (international aisle of grocery store)
1 head broccoli florets, steamed
6 c. steamed rice

How To:

Beat the egg with the salt and pepper and cornstarch until thoroughly combined. Pour over chicken and mix through. Let this rest for 15 minutes or so while you prepare the vegetables, etc.

Dredge the chicken pieces in cornstarch, shaking off excess.

Heat oil in a wok to just below smoking point. Carefully add chicken, piece by piece (so they don’t stick together) with the tongs. Fry chicken until just cooked through. You’ll probably have to do a few batches. When all the chicken is cooked, drain excess oil from wok, leaving just enough to coat bottom.

Add General Tso’s sauce and stir around, still over high heat, until is thickens into a glaze. Add the chicken and toss it around to coat. Add green onions and toss again.

Serve over rice and broccoli.
