Cornbread Pancakes

You’ll Need:

2 1/2 c. buttermilk
1 c. cornmeal
1 c. flour
2 1/2 tsp. baking powder
1 tsp. baking soda
1/4 c. sugar
2 eggs
3 tbsp. vegetable oil
3 tbsp. applesauce

How To:

Whisk together cornmeal and buttermilk.  Cover and refrigerate overnight.

Heat a skillet and spray with cooking spray.

In a bowl, mix flour, baking powder, and baking soda.  Remove cornmeal mixture from the refrigerator and add sugar, eggs, vegetable oil, and applesauce.  Gently whisk in the flour mixture.  Whisk until smooth.

Pour batter into the skillet.  Let cook until it is bubbly and the edges are golden brown.  Flip with a spatula and let cook a few minutes more.

Makes: 12 pancakes
