As an adult, Mac & Cheese has become one of my favorite foods.  It’s easy and quick to cook, open to interpretation, and hearty.  It’s one of those thick delicious flavors that sticks to the sour.

This one has some heat.  I think it’s one of my favorites!

 

Pepperjack Bacon Mac & Cheese

You’ll Need:

12 oz. macaroni elbows
8 slices bacon, cooked ’til crispy and crumbled
1/2 white onion, diced
1 jalapeno, diced
2 tsp. garlic
3 tbsp. flour
1/2 c. heavy cream
1/4 c. vegetable broth
8 oz. shredded pepperjack cheese
4 oz. cream cheese
salt
pepper

 

How To:

Cook macaroni to al dente per box directions (mine said 6 minutes).  Drain and set aside.

While the macaroni is cooking, lay a paper towel down on a plate and place bacon strips on it, with a little space in between (but not a lot), and place another paper towel over that.  Microwave on high for 4-5 minutes or until crispy.  Remove from microwave and let cool before crumbling.  Set aside.

Wash pot thoroughly and spray with cooking spray.  Saute onions and jalapenos 3-4 minutes over medium h eat.  Add garlic and saute another minute or two until fragrant. Add flour and stir to coat veggies.

Add cream, broth, pepperjack cheese, and cream cheese.  Stir throughout until the cheeses are melty.

Stir in cooked noodles and crumbled bacon until coated.

Makes: 4 servings
