I love Chicken Cordon Bleu, but am excruciatingly bad at rolling up the chicken.  On the rare instances that I do not fail, the chicken gets all mushy in the oven and tastes kinda meh.  This recipe is the best.  It allows for the same scrumptious Cordon Bleu flavors I love, and it was easy as pie.  I made it while I was on hold with Amazon’s customer service line (which is super helpful, by the way) and it was a great treat.

Of course, being myself and wanting to use what I already had in the fridge, I changed up some of the ingredients and ultimately made it less healthy.  I’m good like that.

Easy Skillet Cordon Bleu

 

You’ll Need:

1/2 c. breadcrumbs
1 tsp. pepper
1/2 tsp. salt
8 raw chicken tenders
1 tbsp. butter
1 tbsp. olive oil
4 strips of bacon
8 tbsp. mozzarella cheese

 

How To:

Heat oven to LOW BROIL.

Combine the breadcrumbs, pepper, and salt in a large ziplock bag.  Add the chicken and shake until everything is good and coated.

Melt the butter and oil in an oven-proof skillet.  Cook chicken 3-4 minutes on each side.  Place half of a bacon strip and 1 tablespoon of cheese on each tender.

Remove to oven and broil for 2-5 minutes (basically, until the bacon looks cooked).  Eat and enjoy!
