This is a lot of work for a grilled cheese sandwich.

Usually when I’m thinking “mmm, grilled cheese,” I’m thinking a big old bowl of tomato soup, super lazy, sit on the couch and watch reruns of Psych.  This is not that sandwich.  This is “I’m feeling fancy and I want grilled cheese.”  Not that grilled cheese is ever fancy, but you can pat yourself on the back and pretend.  That’s what I do.

Baked Potato Grilled Cheese Sandwich

You’ll Need:

1 red potato
2 slices bacon, cooked
2-3 oz. cheddar cheese
2 slices of bread
1 stalk green onion, chopped (optional)
1 tsp. sour cream (optional)

 

How To:

Preheat the oven to 400F.

Poke holes in the red potato and place on a baking sheet.  Bake until tender, about 35 minutes.  Remove from oven and let sit until cool enough to slice.

Place one slice of bread in a greased skillet.  Sprinkle with about half of the cheese, one slice of bacon, and half the green onions.  Place a potato slice atop that, and place the remaining cheese, bacon, and green onion on top.  Spread the sour cream on one side of the remaining bread slice, then place that sour-cream-side-down on top of the smorgasbord of deliciousness already in the skillet.

Cook slowly.  This takes a little longer, but the cheese will actually melt, and I’m a fan of that.

Serve hot, gooey, and delicious!
