I’ve never been a big fan of Jalapeno Poppers, but it seems like such a logical extension of Fettuccine Alfredo!  Especially since alfredo sauce is based with cream cheese.  Yum, yummy!  I even got Matthew to try it, and he despises jalapenos.

Needless to say, this is a keeper for me.  But don’t take my word for it – try it yourself!

Jalapeno Popper Fettuccine Alfredo

 

You’ll Need:

1/4 lb. fettuccine, uncooked
1/4 c. butter
1/2 small onion, chopped
2 garlic cloves, peeled and minced
2 jalapenos, chopped
4 oz. cream cheese, softened and cut up
1 c. milk
1/4 c. cheddar cheese, shredded
1/4 c. Parmesan cheese, shredded
2 tbsp. Real Bacon Pieces

 

How To:

Bring a large pot of water to boil and cook pasta.

Melt butter in a large saucepan.  Saute onion until soft and slightly browned, about 5-10 minutes.  Add garlic and jalapenos.  Cook 30 seconds more (until garlic begins to brown).  Slowly whisk in the milk.  Add the cream cheese and stir until melted.  Boil a minute or two so it starts to thicken.  Stir in the cheddar and Parmesan cheeses until smooth.  Stir in the bacon.

Drain the pasta and drizzle the sauce.  Garnish with jalapenos and extra bacon pieces.
