When I was little, on the last Monday of every month the school lunch menu would be sent home.  I was allowed to have up to two school lunches a week, so I had to be choosy.  This was way back when school lunch was awful, but we didn’t know it yet.  Two choices, two choice.  Did I want the rib sandwiches? Yes. The alphabet soup? Yes.  The fishsticks? Nooo!!!!  But wait. Hold everything.  Did I want the open-faced grilled cheese and tomato soup? YES YES YES.

It was nothing spectacular, but there was nothing to beat open-faced grilled cheese and tomato soup when I was in elementary school except stuffed crust pizza.

Because, come on.

Open-Faced Grilled Cheese

 

You’ll Need:

2 slices of bread
2 slices of American cheese

 

How To:

Spray a small skillet with cooking spray.  Place bread in the skillet and one slice of cheese atop each slice of bread.  Cook on low.  This will require a bit of patience, but any other way will mean either the cheese won’t melt, or the bread will burn.

Serve with your favorite soup!
