Nobody likes Brussels sprouts.  Nobody.  Well, not on the surface at least.  When I was a kid, my mother made Brussels sprouts with Parmesan cheese, and all I can remember is the smell of spoiled vomit, which is exactly what you want to read about in a food blog.  Like any self-respecting nine-year-old, I found a way to be rid of the vile things.

Then when I was in college, interning in a theatrical education position, one of my students made Brussels sprouts and… they were delicious.  I learned that when made well, Brussels sprouts taste a bit like leafy broccoli.  This recipe is pretty simple, and it isn’t her recipe (it was an old family recipe; I haven’t been able to replicate it yet), but it is tasty and simple.  Make sure not to take it out too early – the burned edge gives it flavor!

 

Roasted Brussels Sprouts

You’ll Need:

1/2 lb. Brussels sprouts
1 tbsp. olive oil
1 tbsp. balsamic vinegar
Sea salt, to taste

 

How To:

Preheat the oven to 375F.

Peels off the outer leaves of the sprouts and trim each end.  Cut each in half.  Discard the outer leaves.

In a medium bowl, toss together all ingredients.  Lay them in a single layer, face down on a cookie sheet.  Roast for 15 minutes.  Flip each sprout so the cut side it now up, and roast another 10 minutes.

Makes: 3 serving
