This concoction is one of the easiest dinners I have made in a long time.  Matthew and I were splitting off on a phone call and had to keep switching places and taking over the cooking, and despite the flip-flopping, nothing was missed and it still came out perfectly delicious!  He even had seconds, and in my household, that is the sign of a truly tasty meal.

Korean Beef & Rice

You’ll Need:

1 lb. ground beef
1/2 c. brown sugar
1/4 c. soy sauce
1 tbsp. sesame oil
3 tbsp. minced garlic
1/4 tsp. ginger
1 tsp. crushed red pepper flakes
salt
pepper
1 bunch green onions, chopped (optional)
1 c. instant white rice
1 c. water

 

How To:

Heat a large skillet over medium heat and add sesame oil, ground beef, and garlic.  Cook through, then drain grease well.  Add brown sugar, soy sauce, ginger, salt, pepper, and red pepper flakes.  Mix, and allow to simmer for a few minutes so the flavors blend.

In a microwave safe bowl, combine instant white rice and water.  Place in microwave and heat for 3 minutes.  While rice is cooking, toss beef from time to time.

Serve beef over rice, with green onions on the top, if desired.
