I love soups, but it is difficult to find a soup that is delicious, healthy, and also my boyfriend will eat it.  Ladies and gents, I would not qualify this soup as healthy, but it is very tasty.  It’s pretty low calorie, although there isn’t a lot of nutritional substance to it, but it’ll keep you warm, and it’s a quick and easy meal to fix up!  Besides, it’s a neat spin on Game Day loaded cheese fries!

You can add more of less of the shredded sharp cheddar depending how cheesy you want your soup to be.  I cut the potatoes into tiny pieces so its just a bit, not like a stew.

The recipe I adapted this from called for celery and chopped onions as well, and if those are your forte, go ahead and add them in!  Me, I like things plain and straightforward.

Soup a la Loaded Cheese Fries

You’ll Need:

4 c. peeled, diced red potatoes
2 tbsp. onion powder
1 tsp. garlic
4 c. water
1/2 tsp. salt
1/2 tsp. pepper
1 can Cream of Chicken Soup (with Herbs)
1 can Nacho Cheese Soup
1 c. sharp cheddar cheese, shredded
1/2 c. Real Bacon Pieces

 

How To:

Combine the water, potatoes, onion powder, and garlic in a large pot.  Bring to a boil.  Simmer until potatoes are tender (about 20 minutes).

Stir in the salt, pepper, Cream of Chicken soup, and Nacho cheese soup.  Mix well.  Add the cheddar cheese and stir until melted.  Add the bacon bits.

Serve hot!
