One of Matthew’s favorite foods in the world is Shepherd’s pie.  Through whatever cruel design, this also happens to be one of my least favorite foods in the world.  There’s something about the juiciness added by the creamed corn that just equals yuck! to me.  From time to time, however, I indulge him, making his favorite dish a rare treat.

Recently, I got a new job (hooray!) which means due to commute, I get home from work about 2.5 hours later than I used to.  While I have never been a huge fan of standing around in the kitchen for 3 hours after work, the change in my arrival time severely affects our dinner choices, as we prefer not to eat dinner at 10pm.  The first week, I tried making all our dinners ahead of time and freezing them, and that went over like an anvil.  Instead, we’ve been alternating new recipes and leftovers, and finding shortcuts to our classics.

If you’re looking for something a little more hearty with – mmmm! – homemade mashed potatoes, check out my other Shepherd’s Pie recipe.  But, if you’re strapped for time like we usually are, this one is quick and easy and, I am told, extra delicious!

Simple Shepherd's Pie

You’ll Need:

1 lb. ground beef
1/4 yellow onion, chopped
1/2 tsp. garlic powder
1 tsp. pepper
1/4 tsp. salt
1 package instant mashed potatoes (we used Butter & Herb)
2 tbsp. Worcestershire sauce
1 can cream corn
1 can whole kernel corn, drained
1/2 c. sharp cheddar cheese
1/4 tsp. paprika

 

How To:

Preheat oven to 350F.

Cook beef and saute onion on stove until beef is cooked through.  Season with garlic powder, pepper, and salt.

Drain grease from the beef mixture and return to the stove.  Add Worcestershire sauce and cook 1 minute longer. Spread into the bottom of a 7×11 baking dish (you can use larger, but the pie will be thinner!).  Spread creamed corn over the beef, and whole kernel corn over the creamed corn.

Cook potatoes according to package directions.  Spread on top of the pie.  Sprinkle with sharp cheddar cheese and paprika.

Bake for 20 minutes.
