Pecan Marshmallow Sweet Potato

You’ll Need:

1 sweet potato
1 tbsp. butter
1 tbsp. brown sugar
cinnamon
nutmeg
ginger
2 tbsp. chopped pecans
1/4 c. mini marshmallows

How To:

Preheat oven to 400F.

Scrub potato clean and plain on a tinfoil-lined baking sheet. Place baking sheet in preheated oven and cook for 45 minutes.

Melt butter and add brown sugar, cinnamon, nutmeg, and ginger. Mix well. Add pecans and
marshmallows and toss well to coat. Set aside.

When potato is done, remove from oven and slice in half. Add pecan-marshmallow mixture, spreading as evenly as possible. Place under the broiler for a minute or two, until marshmallows are lightly browned.

Remove from baking sheet with a spatula to catch all the topping. Serve immediately.
