Healthy Mashed Potatoes

You’ll Need:

2 lb. red potatoes
1 c. buttermilk
1 tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper

How To:

Quarter the potatoes. Place in a pot with enough water to cover and bring to a boil. Reduce heat and simmer until tender, 15 to 18 minutes.

Drain potatoes and return them to the pot.

Add in buttermilk, oil, salt, and pepper. Mash well.

Serve hot. Keep in mind that adding butter and more salt will add calories!
