Grilled Chicken Salad

You’ll Need:

1/3 lb. boneless, skinless chicken breasts
1 c. spinach leaves

How To:

Place chicken in a pan sprayed with cooking spray.  Sprinkle with salt and pepper. Cover and cook approximately 8 minutes.

Flip chicken and sprinkle with salt and pepper.  Cover and cook an additional 8 minutes. Remove cover and sear for 2 minutes on each side. Remove chicken from pan and cut into slices.

Coat bottom of a salad bowl with fresh green spinach leaves. Place sliced chicken on top of the spinach.  Toss and serve with your favorite dressing.
