Chicken Florentine

Chicken with Florentine Sauce

You’ll Need:

6 chicken breasts
1/2 c. Parmesan cheese
1/2 tsp. basil
1/2 tsp. oregano
3 tbsp. butter
2 green onions, chopped
1 tsp. minced garlic
1 tbsp. flour
1/4 tsp. salt
1/2 c. milk
1 tbsp. chicken broth
10 oz. spinach
1 c. mozzarella cheese

How To:

Flatten chicken to 1/2″.  In a bag, combine Parmesan cheese, basil, and oregano.  Add chicken, a few pieces at a time, and shake to coat.

In a large skillet over medium heat, cook 2 tablespoons butter for 4-5 minutes on each side or until juices run clear.  Remove and keep warm.

Saute green onions and garlic in 1 tablespoon butter until tender.  Add flour and salt; stir in milk and chicken broth until blended.  Bring to a boil.  Reduce heat; cook and and stir for 1-2 minutes or until thick.  Stir in spinach.

Remove from heat.  Spoon over chicken and sprinkle with mozzarella cheese.
