Fajita Skillet

You’ll Need:

2 flour tortillas, cut in 1/2″ strips
3 tbsp. olive oil
1/2 lb. chicken strips
1/2 lb. steak strips
1 green pepper, sliced
1 small onion, sliced
2 tbsp. soy sauce
2 tsp. brown sugar
1/2 tsp. chili powder
1/2 tsp. cumin
1/4 tsp. pepper
1 tsp. cornstarch
2 tbsp. lime juice
1 c. cubed fresh pineapple
1 medium tomato, chopped

How To:

In a large skillet, fry tortilla strips in 2 tablespoons oil on both sides for a minute or until browned.  Drain.

In the same skilled, cook the chicken and beef as well as the green pepper, onion, soy sauce, brown sugar, chili powder, cumin, and pepper in the remaining oil for 3-4 minutes or until meat is cooked.

In a small bowl, combine cornstarch and lime juice until smooth.  Stir into the skillet and bring to a boil.  Cook and stir for 1 minute or until thickened.  Stir in pineapple and tomatoes.  Heat through, and serve on tortilla strips.
