Sriracha Macaroni & Cheese

You’ll Need:

16 oz. macaroni elbows
2 tbsp. butter
12 oz. evaporated milk
2 eggs, beaten
6 oz. pepper jack cheese
6 oz. cheddar cheese
1/2 c. diced jalapenos
1 tbsp. red pepper flakes
1 tsp. mustard powder
1/2 tsp. cayenne pepper
1/2 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. Sriracha

How To:

Bring water to a boil. Add pasta to the boiling water and cook for 6 minutes. Drain and return to the same pot. Add the butter to the pot and stir until it is melted.

In a separate bowl, mix the eggs, evaporated milk, spices, and jalapenos. Pour the mixture over the pasta and stir until it starts to thicken.

Turn off the heat and add the cheese a handful at a time. Stir each handful until melted before adding the next handful. Pour sriracha over top and mix well. Serve hot.
