Sesame Soy Sauce Chicken

You’ll Need:

1 11/12 c. water
1/8 tsp. salt
1 c. rice
3 tbsp. soy sauce
2 tsp. lemon juice
1 tbsp. cornstarch
1 tsp. sesame oil
2 tbsp. canola oil
14 oz. uncooked chicken tenders
1 tsp. sesame seeds

How To:

In a 2 qt. saucepan, heat 1 1/4 cups water and salt until boiling over high heat. Stir in rice. Reduce heat to low. Cover and simmer about 10 minutes or until water is absorbed. Fluff with fork.

In a small bowl, stir 2/3 cup water, soy sauce, lemon juice, cornstarch, and sesame oil. Set aside.

Heat wok or skillet over medium-high heat. Add canola oil; rotate to coat. Add chicken and cook 5-8 minutes or until chicken is cooked through.

Stir soy sauce mixture into chicken mixture and heat to boiling. Break up chicken in pan with spatula and add sesame seeds, stirring until sauce is thick.

Separate rice into individual dishes. Add chicken mixture on top and serve hot!
