Roast Pork with White Wine Mustard Sauce

You’ll Need:

1 tbsp. olive oil
1 1/4 lb. pork tenderloin
salt
pepper
1/2 c. white wine
3 tbsp. butter
2 tsp. parsley
1 1/2 tsp. Dijon mustard

How To:

Preheat oven to 400F.

Heat oil in a large oven-proof skillet over medium-high heat. Season pork with salt and pepper and add to pan. Cook, turning occasionally, until browned – about 20 minutes.

Transfer the skillet to the oven. Roast the pork until cooked through, about 45 minutes. Remove skillet from oven with a potholder. Make sure to check meat to see it is cooked through before slicing! Slice into pieces suited to your preferences and set aside.

Add white wine to the skillet. Scrape up any browned pieces from the pan and mix them into the sauce. Cook until wine is reduced by half, about 3 minutes. Add butter, one tablespoon at a time, and allow to melt before adding next tablespoon. Whisk in the parsley and mustard. Sauce will be thin, and that’s okay.

Pour sauce over pork and enjoy!
