Island Rub Pork

You’ll Need:

2 1/2 lb. pork
1 tsp. salt
1/2 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. cinnamon
1/2 tsp. pepper
1/4 tsp. paprika
1 tbsp. olive oil
1/4 c. + 2 tbsp. brown sugar
1 tbsp. garlic, minced
1 1/2 tsp. Sriracha

How To:

Preheat oven to 350F.

In a small bowl, whisk together the salt, chili powder, cumin, cinnamon, pepper, and paprika. Press and rub mixture around all sides of the pork.

Heat olive oil in a skillet on medium-high heat. Once oil begins to smoke, transfer pork to skillet and cook 2 minutes until bottom has browned. Rotate pork and cook an additional 2 minutes to brown the other side.

In a small bowl, stir together brown sugar, minced garlic, and hot sauce. Spread mixture over the top of browned pork. Transfer pork to the over and cook about 20 minutes.

Serve warm.
