Healthified Chicken Quesadillas

You’ll Need:

1 c. shredded cooked chicken breast
1/4 c. salsa
1/2 c. fat-free refried beans
2 tbsp. chopped fresh cilantro
4 low-fat whole wheat tortillas
3/4 c. shredded reduced fat Mexican cheese
sour cream (optional)

How To:

In a medium bowl, stir chicken, salsa, and cilantro until well mixed. Spread 2 tablespoons beans over half of each tortilla. Top bean side of tortilla with chicken mixture and cheese. Fold tortillas in half and spray both sides with cooking spray.

Heat a 12” non-stick skillet over medium-low heat. Place 2 tortillas in the skillet. Cover and cook 3-4 minutes. Turn tortillas and cook an additional 3-4 minutes until quesadillas are lightly brown. Repeat with remaining tortillas.

Cut into wedges and serve, with salsa and sour cream if desired.
