Red Velvet Crepe with Cream Cheese Icing

You’ll Need:

1 1/2 oz. cream cheese, softened
1/12 c. +1 1/2 tbsp. butter, softened
1/2 c. powdered sugar
2/8 c. milk
1/2 tbsp. white vinegar
5/8 tsp. vanilla
1/2 c. flour
3/4 tbsp. cocoa powder
1/2 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. salt
1/2 c. sugar
1/2 egg
3/8 tbsp red food coloring

How To:

Preheat a non-stick electric griddle to 350F. Spray with cooking spray if necessary.

Mix cream cheese and 1 1/2 tablespoons butter and combine until fluffy. Add powdered sugar, 1/8 cup of milk, and 1/8 teaspoon of vanilla. Combine until smooth and set aside.

Measure out remaining milk and whisk in vinegar. Set aside to rest for 2 minutes.

In a bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside. Add sugar, eggs, red food coloring, remaining vanilla, and remaining butter (melted) to the dry mixture. Mix well. Add the milk mixture to the combination. Mix everything together thoroughly until well combined at there are no more chunks.

Pour crepes on to prepared griddle. They will cook quickly! After about 2 minutes, flip over the crepes and allow them to cook on the other side. After crepes are browned on both sides, remove to a plate.

Drizzle prepared cream cheese icing on to crepes. For a little pizzazz, top each crepe with a dollop of whipped cream and serve hot!
