1 lb. ground beef
1 tsp. onion powder
2 c. salsa
15 oz. black beans, rinsed and drained
1 pkg. taco seasoning
1/4 tsp. ground cumin
6 taco shells, crushed
4 oz. shredded Mexican cheese
sour cream (optional)
Preheat oven to 400F. In a large skillet, cook beef and onion powder over high heat until meat is no longer pink. Drain.
Stir in the salsa, beans, taco seasoning, and cumin. Mix well.
Place crushed taco shells at the bottom of a casserole dish. Layer half of the meat mixture on top of the crushed taco shells. Layer 2 ounces of cheese on top of beef mixture. Layer remaining beef mixture into casserole dish. Layer remaining cheese on top of the beef mixture. Cover and bake for 25
Uncover and bake for 5-10 minutes. Let stand for 5 minutes before serving.
