Peppermint ‘N’ Chocolate Bars

You’ll Need:

1 c. shortening
1/2 c. sugar
1/3 c. cocoa powder
1 tsp. vanilla
1 1/2 c. chocolate graham cracker crumbs
1 c. coconut
1/2 c. powdered sugar
1/4 c. milk
1 tsp. peppermint extract
1/3 c. chocolate chips
1 tsp. vegetable oil
food coloring (optional)

How To:

In a 2-qt. saucepan, combine 1/2 cup butter, sugar, cocoa powder, and vanilla. Cook over medium heat until mixture is smooth. Stir in chocolate graham cracker crumbs and flaked coconut. Press firmly in a 9×13” pan and refrigerate 15-20 minutes.

In a medium mixing bowl, mix remaining butter, powdered sugar, milk, peppermint extract, and food coloring if desired. Combine at top speed until smooth. Spread filling evenly over crust. Refrigerate 15-20 minutes.

Combine chocolate chips and oil in a 1-qt. saucepan at low heat, stirring until melted. Drizzle over filling and refrigerate 2-3 hours.

Cut into bars and store in refrigerator.
