Mint Chocolate Chip Cheesecake Brownies

You’ll Need:

1/2 c. butter
8 oz. coarsely chopped semi-sweet chocolate
1 1/2 sugar
3 large eggs
1 tsp. vanilla
3/4 c. flour
1/4 tsp. salt
8 oz. cream cheese, softened
1 egg yolk
1/4 tsp. peppermint extract
2 drops green food coloring
2/3 c. mini chocolate chips

How To:

Preheat over to 350F. Spray 11×7” pan with cooking spray. Set aside. Set out cream cheese for cheesecake layer and allow to soften.

Make brownies first. Melt butter and semi-sweet chocolate in a saucepan on medium heat, stirring constantly (about 6 minutes). Remove from heat and let cool to room temperature (about 15 minutes).

Stir 1 1/4 cups sugar into chocolate mixture until combined. Add eggs one at a time, whisking until smooth. Whisk in vanilla. Fold in flour and salt. Pour into prepared pan, reserving 1/4 cup of batter.

Make cheesecake layer. With a hand-held mixer on medium, beat all remaining ingredients (including 1/4 cup sugar) in a medium bowl until smooth. Dollop spoonfuls of the mixture on top of the brownie batter. Cover with the 1/4 remaining batter. Glide a knife through to create a swirl pattern. Add more mini chocolate chips on top.

Bake for 30-35 minutes, or until a toothpick come out nearly clean. Allow brownies to cool before cutting.
