Black Bean Chicken with Rice

You’ll Need:

1 1/2 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. pepper
1/8 tsp. salt
2 4 oz. boneless, skinless chicken breasts
1 tsp. canola oil
3/4 c. frozen corn
1/2 c. salsa
1 c. cooked brown rice

How To:

Combine chili powder, cumin, pepper, and salt. Rub over chicken. In a large non-stick skillet coated with cooking spray, brown chicken in oil on both sides. Stir in beans, corn, and salsa. Cover and cook over medium heat for 15 minutes or until a meat thermometer reads 170F.

Slice chicken; serve with rice and bean mixture.
