Crash Hot Potatoes

You’ll Need:

12 red potatoes
3 tbsp. olive oil
salt
pepper
rosemary

How To:

Preheat oven to 450F.

Bring a pot of salted water to boil.  Add in the potatoes and cook until they are fork-tender.  Do not cut the potatoes.

Drizzle olive oil on a sheet pan.  Place potatoes on the pan, leaving plenty of room between each potato.

With a potato masher, gently press down the tops of the potatoes until they mash slightly.  Brush the tops with more olive oil.

Sprinkle potatoes with salt, pepper, and rosemary.

Bake for 20-25 minutes or until golden brown.
