Cacio e Pepe

You’ll Need:

3 tbsp. butter
2 tsp. freshly grated black peppercorns
1 c. shredded Parmesan cheese
7 oz. spaghetti

How To:

About an hour ahead, remove the butter from the refrigerator and allow to come to room temperature.

Fill a large pot with water and bring to boil.

In a large bowl, combine cheese, pepper, and butter until the mixture is crumbly.

Once the water is boiling, add pasta and cook according to directions on box (mine said 10 minutes to al dente).  Use a liquid measuring cup to remove 1/2 cup of the pasta water and add it to the butter mixture.  This will melt the cheese.  Drain the rest of the water from the pasta and add the pasta to the butter/water mixture, stirring well to coat the spaghetti.  If needed, add more water for a creamier consistency.
