Basic Sauteed Chicken

You’ll Need:

2 lbs. boneless, skinless chicken breasts
salt
pepper
olive oil
butter
1/2 c. chicken broth
1/2 c. white wine
2 tbsp. parsley

How To:

Trim the chicken breasts and pound them flat.  Sprinkle both sides with salt

Heat a very large pan over medium-high heat and add the butter and olive oil.  When the mixture is very hot but not burning, add the chicken breasts in one layer.  Let them cook for 5 minutes or so until the bottom gets nice and brown.

Flip the chicken and brown the other side, about another 5 minutes.  Make sure the chicken is cooked through before you remove it from the heat!  When it is cooked, set aside and pour the wine into the pan.  Scrape away and dissolve the browned pieces stuck in the pan and continue to cook until the wine is reduced by half.

Add the chicken broth and increase heat to high.  Cook until the sauce seems syrupy.  Drizzle over chicken, sprinkle with parsley, and serve.
