Yellow Cupcakes

You’ll Need:

2/3 c. butter
1 3/4 c. sugar
2 eggs
1 1/2 tsp. vanilla
2 1/2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 1/4 c. milk

How To:

Preheat oven to 350F.  Line muffin tins with paper cups or butter and flour.

Cream butter and sugar in a bowl until light and fluffy, about 304 minutes.  Add eggs one at a time, beating well.  Mix in vanilla.

In a medium bowl, sift flower, baking powder, and salt.  Whisk to combine.  Add mixture to the butter mixture.  Add milk.  Mix well.

Fill cups 2/3s full and bake 18-20 minutes or until a toothpick comes out clean.  Cool for 10 minutes, then remove to a wire rack to cool completely.
