Slow and Easy BBQ Chicken

Slow ‘N’ Easy Barbecued Chicken

You’ll Need:

1/4 c. + 1 tsp. water
3 tbsp. brown sugar
3 tbsp. white vinegar
3 tbsp. ketchup
2 tbsp. butter
2 tbsp. Worcestershire sauce
1 tbsp. lemon juice
1 tsp. salt
1 tsp. paprika
1 tsp. ground mustard
1/2 tsp. cayenne pepper
1 2 1/2-3 lb. chicken, cut up and skin removed
4 tsp. cornstarch

How To:

In a small saucepan, combine 1/4 cup water, brown sugar, white vinegar, ketchup, butter, Worcestershire sauce, lemon juice, salt, paprika, ground mustard, and cayenne pepper.  Bring to a boil.  Reduce heat; simmer, uncovered, for 5 minutes.  Remove from heat.

Place chicken in a slow cooker.  Pour sauce over top.  Cover and cook on LOW for 3-4 hours, or until the chicken juices run clear.

Remove chicken to a serving platter and keep warm.  If necessary, strain cooking juices and skim fat.  Transfer sauce to a sauce pan.  Combine cornstarch and remaining water until smooth and stir into the sauce pan.  Bring to a boil, stirring constantly – sauce will thicken quickly!  Once desired thickness has been reached, remove from heat and spoon sauces over chicken.  Serve the remaining sauce on the side.
