Heavenly Blueberry Muffins

You’ll Need:

3 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
2 sticks butter
2 c. sugar
3 eggs
1 1/2 tsp. vanilla
8 oz. greek yogurt
1/4 c. milk
2 1/2 c. blueberries

How To:

Preheat oven to 350F and grease a muffin tin.

In a bowl, combine 2 1/2 cups flour, baking powder, and baking soda.  Add 1 1/2 sticks butter and 1 1/2 cup sugar and cream until light and fluffy.  Add eggs one at a time, mixing until combined, then add vanilla, yogurt, and milk and mix well.  Carefully fold in blueberries.

Spoon batter into a muffin tin, filling cups to the top but do not overfill.

Combine remaining flour, sugar, and butter in a bowl.  Use a wire whisk to cut into the butter, and mix until butter is cut small and mixture resembles coarse crumbs.  Sprinkle over the muffins until completely covered.

Bake for 30-35 minutes or until a toothpick comes out clean.
