Chile-Cheddar Mashed Potatoes
2 1/2 lbs. potatoes, peeled and cut into 1″ chunks
2 cloves garlic, peeled and halved
1 c. milk, heated
3 tbsp. butter
4 oz. sharp white cheddar cheese, shredded
4 oz. diced mild green chiles
1 tsp. salt
Place diced potatoes and garlic in a lidded pot. Fill with cold water until potatoes are covered by 1 inch. Cover pot and bring to a boil. Reduce heat to a simmer and cook 10 minutes, until fork tender.
Drain potatoes and immediately return to pot. Stir in milk and butter; mash until smooth. Stir in cheese, chiles and salt.
