Liberty Tree Apple Cobbler

You’ll Need:

Pie Crust Dough
3 1/2 c. flour
2 tbsp. sugar
1 tsp. salt
2 sticks butter, cut into 1/4″ pieces
4 tbsp. Crisco

Apple Filling
4 lbs. Golden Delicious Apples
1/2 c. sugar
1 1/2 c. brown sugar
1/2 tbsp. nutmeg
1/2 c. flour

Cream Cheese Filling
8 oz. cream cheese, softened
1 egg
2/3 c. sugar
1 tsp. vanilla

Oatmeal Strueusel
3/4 c. flour
1/2 tsp. cinnamon
1/2 c. brown sugar
3/4 c. rolled oats
1/2 c. butter

How To:

Preheat oven to 300F.

Begin with the pie dough crust.  Sift the flour, sugar, and salt in a large bowl.  Work in butter and Crisco with your fingers until the mixture resembles coarse crumbs.  Add two tablespoons ice water until it has absorbed and dough comes together.  If needed, add more water.  Spray the inside of a 9 x 13 inch baking dish.  Roll our dough and line the backing dish.

Next, make the apples.  Peel and cube, discarding skin and core.  Sift dry ingredients together in a small bowl.  Place apples in a pot and cook over medium heat for 2-3 minutes.  Pour the dry ingredients gradually over the apples over the heat until apples are soft and well-coated.  Remove apples from heat and chill thoroughly.  Place cooled apple filling into the dish.

For the cream cheese filling, combine all ingredients in a bowl and mix until smooth.  Top apples with cream cheese mixture and swirl a little into the apples.  It is important that the filling is spread evenly, because otherwise it will cook chunky and odd.

Finally, combine all strueusel ingredients in a bowl.  Spread the mixture evenly over the top of the dish.

Bake for 1 hour and 15 minutes.

Serve with vanilla ice cream!
