Strawberry Blueberry Muffins

You’ll Need:

2 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 stick + 6 tbsp. butter
1/2 c. milk
1/3 c. greek yogurt
1 egg
1 tbsp. vanilla
3/4 c. strawberries, diced
1/2 c. blueberries
1 tsp. cinnamon
1/3 c. brown sugar

How To:

Preheat oven to 400F and line a muffin pan with papers.  Set aside.

Melt 1 stick (8 tablespoons) butter.  In a large bowl, combine 2 cups flour, baking powder, and salt.  Add melted butter, milk, greek yogurt, egg, and vanilla.  Combine well.  Batter will be sticky!  Fold in blueberries and strawberries.  Scoop batter into prepared muffin pan, filling the cups about three-quarters of the way.

In a small bowl, combine remaining 6 tablespoon butter (chilled), remaining flour, cinnamon, and brown sugar.  Mix with a whisk, cutting into the butter.  Sprinkle mixture on top of muffins.

Bake for 18 minutes or until toothpick comes out clean.
