Steak and Veggie Salad
12 oz. green beans, trimmed
1/2 c. sliced fresh chives or scallions
1 lb. sirloin steak, trimmed
1 c. corn kernels
Cut steak into small pieces (approximately 1” x 1/2”) and season with salt and pepper. Cook on stove top to desired doneness.
Cook beans in boiling water until bright green and just tender, about 4-5 minutes. Rinse in a colander with cold water until cool. Drain thoroughly and transfer to a large bowl. Stir in chives or scallions with beans.
Cook corn in boiling water. If using a cob, cut the corn off carefully. Mix in with beans. Add steak; season as desired.
