Spicy Macaroni and Cheese

You’ll Need:

1 lb. pasta
2 tbsp. butter
3 tbsp. flour
2 c. milk
3 c. cheddar cheese, shredded
1/2 tsp. mustard powder
1/4 tsp. cayenne pepper
1/4 tsp. paprika
1/4 tsp. pepper

How To:

Preheat oven to 350F.

Cook pasta according to package directions until it is a few minutes less than al dente.

In a large saucepan, melt butter.  Whisk in flour to make a roux and cook 1 minute.

Whisk the milk into the roux a little at a time, making sure to work out all the clumps for a smooth sauce. Cook over medium heat until milk thickens, about 8 minutes.

Remove sauce from heat. Stir in 2 2/3 cups cheddar cheese with a spoon; stir until cheese is melted. Stir pasta into sauce.

Pour pasta into a baking dish. Top with a little cayenne and paprika, and the remaining cheddar cheese. Bake 15-20 minutes or until cheese has melted and edges are crisp.
