Refried Bean Soup

You’ll Need:

16 oz. refried beans
15 1/4 oz. corn kernels, drained
15 oz. black beans, rinsed and drained
14 1/2 oz. chicken broth
1/2 c. water
4 oz. green chilies
1/4 c. salsa
2 tbsp. hot sauce
1 tsp. cayenne pepper
1 tsp. chili powder
tortilla chips

How To:

In a large saucepan, combine all ingredients save tortilla chips.  Bring to a boil.

Reduce heat; simmer, uncovered, for 8-10 minutes or until heated through.

Serve with tortilla chips.

Calories: 220 + tortilla chips

Be careful with the spices in this soup.  I like it spicy, so we added the red hot and spices to the recipe.  If you’re not a fan of spice, you can leave those out and it will still be delicious. – originally tested 12/26/13
