Mint Chocolate Chip Buttercream Frosting

You’ll Need:

3/4 c. butter, partially softened
1 drop peppermint extract
1/2 tsp. vanilla
2 1/4 tsp. powdered sugar
1 tbsp. heavy cream
green food coloring (10 drops)
1/2 c. chopped bittersweet chocolate

How To:

Whip butter on medium high speed until nearly white and very fluffy, about 7-8 minutes, frequently scraping down the sides and bottom of the bowl.

Blend in peppermint extract and vanilla. Be very carefully with the mint extract, because a smidgen too much will overpower the batch.  Ass in the powdered sugar and heavy cream and mix on low speed until combined.  Blend in food coloring then increase speed to medium and beat until very light and fluffy, about 5-6 minutes, frequently scraping down the sides and bottom of the bowl as needed.

Fold in chopped chocolate just before spreading the frosting.

This recipe was the first use of my new KitchenAid Mixer and it worked beautifully!  The recipe, adapted from CookingClassy, is absolutely delicious, with just a subtle enough mint flavor. – originally tested 12/27/13
