Makeover Macaroni and Cheese

You’ll Need:

2 c. elbow macaroni
1/4 c. butter, cubed
1/3 c. flour
1 1/2 c. milk
1/4 c. chicken broth
1 c. sour cream (8 oz.)
1/2 lb. reduced-fat Velveeta
1/4 c. grated Parmesan cheese
1/2 tsp. ground mustard
1/2 tsp. pepper
2 c. shredded, reduced-fat cheddar cheese
minced chives

How To:

Preheat oven to 350F and grease a casserole dish.

Cook macaroni according to box directions.  Meanwhile, in a large saucepan, melt butter.  Stir in flour until smooth.  Gradually add milk and broth.  Bring to a boil; cook and stir for 2 minutes or until thickened.

Reduced heat; stir in the sour cream, Velveeta, Parmesan, mustard, and pepper until smooth.

Drain macaroni; stir in cheddar cheese.  Transfer to casserole dish.  Add cream sauce and mix well.  Bake, uncovered, for 35-40 minutes or until bubbly.  Sprinkle with chives.
