Pineapple Teriyaki Turkey Burger

You’ll Need:

20 oz. pineapple slices
1/2 c. teriyaki sauce
2 lb. ground turkey
1 tsp. ginger
1/2 c. panko or bread crumbs
8 whole grain hamburger buns
8 slices cheddar cheese

 

How To:

Drain the pineapple,  but reserve the juice.  There should be 10 slices in the can, so you can put two aside for other purposes – the other 8 will be used.

Stir together the pineapple juice and the teriyaki sauce in a small bowl.

Mix together the ground turkey, ginger, bread crumbs, and 1/4 cup of the teriyaki/pineapple mixture.  Shape into 8 patties.

Heat the grill or skillet.  Brush patties with remaining mixture while cooking them; cook until brown.  Remove patties from pan or grill and put on a plate, them grill the pineapple slices for a moment or two until they are lightly golden brown.

Serve burgers on buns with cheese and pineapple.

Anyone who knows me knows that I am not a big fan of ground turkey, specifically in the burger-style!  However, the pineapple-teriyaki infusion makes these pretty tasty – especially with the cheese on top!  Quite honestly the best turkey burgers I’ve ever had, and Matthew agreed.  That isn’t to say we’re head-over-heels in love with the recipe, but it’s definitely one we’d come back to when in possession of ground turkey.  Keeping to the whole grain or at least wheat buns is important, though… not just for the calories, but the flavor.  I think that with normal white buns, it would have been too bland. – originally tested 12/22/13
