1 1/2 lbs. ground beef
1 medium onion, chopped
3 cloves garlic, chopped
1 can whole kernel corn, drained
1 can condensed cream soup
2 c. cheddar cheese, shredded
1/2 c. milk
4 tbsp. sour cream
1 30 oz. bag frozen tater tots or crispy crowns
1 tbsp. pepper
Allow the tater tots to defrost while preparing the rest of the dish. Preheat oven to 350F.
In a large skillet, cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place in a large bowl and set aside.
In a small bowl, combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn, pepper, and 1 cup cheddar cheese. Gently mix to combine.
Grease a 9” x 13” baking dish. Layer half the tater tots on the bottom, pour the hamburger mixture over the top, then later with the other half of the tater tots. Sprinkle with remaining 1 cup cheddar cheese and bake 25-30 minutes or until golden brown and crunchy.
