Sugar-Crusted Raspberry Blueberry Muffins

You’ll Need:

2 c. flour
3/4 c. sugar
2 tsp. baking powder
1/2 c. butter, melted
3/4 c. milk
1 egg
1/4 tsp. vanilla
1 c. raspberries
1 c. blueberries

How To:

Preheat oven to 400F and grease a muffin pan.

In a medium bowl, combine 1 3/4 cups flour with 1/2 cup sugar, and baking powder.  Add the butter and combine.

In a second bowl, whisk together the milk, egg, and vanilla.

Gradually, add the milk mixture to the flour mixture and stir until just combined; the batter will be liquidy.

Toss the berries in the remaining flour and fold into the batter carefully – they may squish, and if that happens, it is okay.

Fill each muffin cup at least 3/4 of the way full with batter.  sprinkle each cup with remaining sugar.

Bake to 15 to 17 minutes.
