Carne Asada Tacos

You’ll Need:

2 lbs. flank or skirt steak
1/3 c. olive oil
1/4 c. lime juice
1/4 c. orange juice
3 tbsp. cider vinegar
1 tsp. honey
1/2 c. chopped red onion
1 tbsp. cilantro
3 cloves garlic, minced
1 jalapeno, minced
1 tsp. chili powder
1 tsp. cumin
1 tsp. paprika
salt
pepper
10 corn tortillas
shredded Monterey Jack cheese
pico de gallo
hot sauce

How To:

In a mixing bown, stir together olive oil, lime juice, orange juice, cider vinegar, honey, red onion, cilantro, garlic, jalapeno, chili powder, cumin, paprika, salt, and pepper.  Place steak in a baking dish and pour marinade over steak.  Cover with plastic wrap and allow to marinate in the refrigerator for 2-5 hours, rotating once halfway through marinating.

Grill:  Brush a grill lightly with oil and heat to medium-high.  Remove steak from refrigerator and allow exess marinade and bits to run off dteak.  Season with more salt and pepper and transfer to grill.  Cook about 5 minutes per side or until desired doneness.  Transfer to a plate, cover with foil, and allow to rest for 5 minutes.

Oven:  Preheat oven to HIGH broil.  Remove baking dish from refrigerator and place in heated oven.  Broil for 4 minutes, remove and flip steak, and broil an additional 4 minutes.  Remove from oven.

Cut into thin strips and serve over warm tortilla shells with cheese, pico de gallo, and hot sauce.

Carne Asada is the Spanish for “grilled beef” so if at all possible, do make this on the grill.  It’s not bad on the stovetop, but it’s delicious when it’s grilled. – originally tried 12/5/13
