Parmesan Crusted Chicken

You’ll Need:

2 boneless, skinless chicken breasts
2 eggs whites
1 tsp. lemon juice
1/4 c. cornstarch
1 c. bread crumbs
1/4 c. grated Parmesan
1/4 c. shredded Parmesan
2 tbsp. olive oil

How To:

Preheat oven to 450F.

Pound chicken breasts flat.

Whisk egg whites, lemon juice, and cornstarch in a shallow bowl.  Set aside.

Mix two Parmesan cheeses and bread crumbs in a shallow bowl.  Set aside.

Dip chicken first in a egg white mixture, coating well.  Dip coated chicken into bread crumb mixture, coating as well as possible.

Place chicken into oil-lined, oven-friendly skillet or cast iron pan.  Fry chicken for 3 minutes on each side, then transfer to oven.  Cook for 10 minutes on both sides.
