Tender Roast Pork Cutlets

You’ll Need:

4 tsp. salt
1 tbsp. ground thyme
1 tbsp. black pepper
1 tbsp. rosemary
1/2 tbsp. cayenne pepper
4 pork cutlets

How To:

Preheat oven to 325F. In a small bowl, combine all the ingredients except the pork. Rub the mixture all over the pork and place the pork on a rack in a roasting pan.

Roast the pork for about 40 minutes, turning halfway. Remove the roast from the oven and let it rest for 15 minutes before serving.

This recipe originally comes from the Unofficial Harry Potter Cookbook and although I have adjusted it for a lesser quantity and to use chops instead of loins, the concept is still the same.  The inscription from the cookbook is thus:
