Spiced Glazed Carrots

You’ll Need:

1 lb. fresh carrots, cut into slices
1/4 c. unsweetened apple juice
1 tsp. ground cinnamon
3/4 tsp. cumin
1/2 tsp. ginger
1/4 tsp. coriander
dash cayenne pepper
2 tsp. lemon juice
2 tsp. honey

How To:

In a large nonstick skillet coated with cooking spray, combine carrots, apple juice, cinnamon, cumin, ginger, coriander, and cayenne. Bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until carrots are crisp and tender.

Add lemon juice and honey.  Bring to a boil; cook uncovered for 2 minutes or until sauce has thickened.
