Quinoa with Chickpeas and Tomatoes

You’ll Need:

1 c. quinoa
1/8 tsp. salt
1 3/4 c. water
1 c. canned garbanzo beans, drained
1 tomato, chopped
1 clove garlic, minced
3 tbsp. lime juice
4 tsp. ground cumin
1/2 tsp. chopped fresh parsley

How To:

Place the quinoa in a fine mesh strainer, and rinse under cold running water until the water no longer foams. Bring the quinoa, salt, and water to a boil in a saucepan. Reduce to medium heat to medium-low, cover, and simmer until the quinoa is tender, 20-25 minutes.

Add lemon juice and honey.  Bring to a boil; cook uncovered for 2 minutes or until sauce has thickened.
