Roast Potatoes with Garlic and Rosemary

You’ll Need:

6 red potatoes, chopped into 1/4-inch slices
1/4 c. olive oil
1 tsp. salt
1 tsp. rosemary
2 garlic cloves, minced
black pepper, to taste

How To:

Preheat oven to 400F.

Combine potatoes with the oil, salt, rosemary, garlic, and black pepper in a bowl. Coat evenly.

Spread the potatoes in a large, shallow roasting pan or rimmed baking sheet.

Roast the potatoes for about 45 minutes, until the potatoes are crisp around the edges. Halfway through the baking, remove the pan briefly and toss the potatoes again, and then replace in the oven to continue roasting.

Serve warm.
