Mashed Taters with Corn and Cheese

You’ll Need:

4 c. cubed peeled potatoes
1 1/2 c. water
4-6 tbsp. milk
3 tbsp. butter, softened
1/2 tsp. salt
1/4 tsp. pepper
1 c. frozen corn, thawed and warmed
1 1/2 c. shredded colby-monterey jack cheese

How To:

Boil potatoes in water for 20 minutes until easily mashable. Drain. Mash with milk, butter, salt, and pepper.

Stir in corn and cheese.
